This is my go-to simple sandwich when I don't know what to eat. It's delicious and very flavorful and i'm sure you will love it! I don't eat soy very much, but when I do eat it, it goes something like this...
Slice the tofu into three sandwich sized slices. Don't make them too thin or they will fall apart when you are cooking them.
Marinate tofu slices in 1/8- 1/4 cup of liquid aminos (depending on the size of your tofu slices), 2 crushed cloves of garlic, and the juice of half a lime. Let that sit in the fridge for about 30 minutes or overnight.
In the meantime...cut up your veggies!
And make your sauce! Mix 1/4 of tahini with a 1/4 cup of water. Make sure that its smooth and fully incorporated. Add liquid aminos and dijon mustard to your taste!
Cook your tofu slices on a skillet pan (with or without oil), I personally did not use oil and it turned out to be so yummy!
Then assemble your sandwich however you would like! I like putting my veggies down first, then the tofu slices and then drowning the whole thing in sauce!
